This is a shabu-shabu dish where you dip Nagasaki herb-fed mackerel, which is usually eaten raw as sashimi, in the hot pot for just two seconds.

Straw-grilled: Mackerel grilled over straw
This is mackerel grilled over straw, a dish you won't easily find anywhere else.It is pickled and served with mountain wasabi.
Simmered dish: Mackerel simmered in miso and seasonal vegetables
This is an exquisite dish featuring mackerel simmered in miso until the bones are edible, and a broth infused with the flavors of seasonal vegetables, making it a dish you'll want to drink to the last drop.
Fried food: Spring rolls with mackerel, bamboo shoots, and cheese.
